Together, we ground choclo (corn), creating paste and liquid which were then mixed with whipped egg whites, egg yokes, butter, lard, baking powder and sugar. This was then separated into two batches – one mixed with sugar, vanilla and raisins and the second mixed with onions, seasoned sauce, and salt.
These batches were then carefully wrapped inside the corn husks and steamed above boiling water. The result is a traditional Ecuador food called humitas. The taste was amazing, but the fellowship in making them together with Janelle and Frank’s family touched a much deeper appetite than food, expressed several times in gratitude to God in prayer.
The day centered on food, fellowship, more food and more fellowship, losing complete track of time. I wonder if perhaps this is what Jesus often experienced with his disciples and friends. I wonder if this is what Jesus still longs for us to experience with him and with one another today. This is a taste of the life that Jesus promised when he promised “Those who believe will have life!”
Last Wednesday, Ecuador expelled the US Ambassador. The US immediately responded by expelling the Ecuador Ambassador. The front page headlines in the Ecuador Sunday morning newspaper today was “Twelve Years of Problems with the U.S.” In this large world of stressed international relationships, are two small families from each country gathered together in a small village in the highlands of Ecuador experiencing God’s gift of fellowship, love, and peace. What a gift and blessing!
So many more stories and photos to share, but they will have to wait. What a blessed day of fellowship with friends in the presence of an awesome God!
We have now returned to Riobamba and are sitting in their living room together after drinking tea and eating fruit. Janelle is finishing correcting papers from her school and we are all so thankful for a blessed day! Tomorrow, Judy and I are planning to go to Banos for a couple days.
